Anyone got some good recipes for making turkey stuffing etc... Ive never done Turkey before and need a good easy one.

Ok, so the stuffing recipe goes a lot on eyeballing things :) Bear with it and just do it, don't be scared because there aren't exact measurements! It's super easy and really hard to mess up! It's always awesome...especially when I don't make it :)

Stuffing Recipe

Serves about 5-20 :)

~Break up 2 loaves of bread & put in large pan.

~Pour broth over bread (hee hee, ugh, start with about 2-3 cups of broth either from cooked down giblits or make fresh with imitation chicken bouillon)

~Cut up lots of celery & onions, cook them in a few TBSP's of butter for about 5 minutes to soften them up. Then dump them in the pan with bread.

~Sprinkle with salt and about 2 tsp of sage.

~Beat 3-4 eggs and them pour over pan and stir it all up.

It should be moist and formable (if you push it down to the sides of the pan it should be moist enough to stay where you mush it to and not bounce back away...does that make sense? lol)

If it's too dry add some more broth. If it's too moist...it's perfect! You can't go wrong it will just need to cook a little longer but it will still be awesome and even more yummy!

Bake for about 1 hour at 350-375.

You're lucky I added as much to the recipe as I did for a beginner :) Here's my version:
2 loaves bread in pan.
Pour broth over bread.
Cut lots of celery, onion cook in butter a little.
put in w/bread & stir
salt & sage (about 2 tsp) to taste
beat in 3-4 eggs
pour in & stir
350-375 about 1 hour
I love shorthand recipes!!! lol

Here is my favorite bread recipe for this time of year. It's very sweet and makes great gifts! The recipe makes a LOT of small loaves :) or 3 regular bread pans.

Pumpkin Spice Bread

1 (15oz can) pumpkin (or sweet potato)
4 eggs
1 cup veggie oil
3 cups sugar
3 1/2 cups flour
2 tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves (obviously ground)
1/4 tsp ginger

Throw it all together and mix with a mixer until blended & pour into greased pans. Super simple!

Bake @ 350
50 minutes for regular bread pans
25 minutes for the smaller pans

Don't forget...

Green Been Casserole

Serves 6

1 10 3/4oz can Cream Mushroom Soup
1/2 cup milk
1 tsp Soy Sauce
dash pepper
4 cups cooked cut green beans
1 can French Fried Onions

Mix everything (minus 1/2 the can of French Fried Onions) into a 1 1/2 qt casserole dish.
Bake at 350 for 25 minutes
Stir & Sprinkle with the remaining onions.
Bake 5 more minutes

I love to make sweet potato casserole, make the sweet potatoes, the canned ones work too and mash them really good, put the little marshmallows on top and bake till golden brown, yummy :) I love the green bean casserole too but I've never put soy sauce in it

I dont cook at all so I guess we are having a Kelly thanksgiving. Ive never done any of this at all. Now I just need a good Turkey recipe.

Just be sure to brine your turkey before baking and it will stay nice and juicy. You can look up the recipes for brine. And just use the one you think sounds the best.

If you read the directions on the turkey package it would be a good basic recipe. Granny's tip of brine is excellent too! You can do searches and find millions of turkey recipes & brine techniques.

I hope that you will have the same beginners luck that I had with my first turkey I cooked for the entire inlaw family! It came out awesome and I don't know what I did (other than poultry seasoning rub & basted it every 30 minutes) but I can't duplicate it for anything and mine always comes out way more dry than I would like :( I've injected mine with the buttery stuff in the past and it hasn't helped at all except to put some flavor in the meat.

Since you are having the "Kelly Feast" lol, tell me how you want to cook it and I'll come up with simple instructions for ya. Are you cooking it in the oven? Roaster? Grill? Hot Oil? Start there...

Do you want to inject it? Rub it? Marinade it?

Do you want traditional? or un-ordinary but good?

I also mix in sweet potatoes with the mashed potatoes for a twist. About 2/3 is regular potato and 1/3 is sweet potatoes. Mix in the butter and milk like usual, but use more butter, condensed milk (not SWEET!)instead of regular milk and throw in some brown sugar too and marshmallows if you want. Leave out the salt, but pepper is good.

It's a good way to get the sweet potatoes in there without them being overbearing.

That recipe came straight from a recipe card I got through Campbell's :) I don't usually put soy sauce in mine either and it's always a bit bland.

"Kelly Thanksgiving" means you will wing it and hope for the best! lol I'm not a great cook either, I've done it several times for the Holiday meals and everyone is always happy. My recipes are always varied and never use exact measurements and they always come out "good enough" :)

You want pies? Pickled beats? Party type appetizers? I've got those recipes too :) Just ask!

I strongly suggest purchasing the "Hawaiian rolls" from the store and just warm them up in the oven for a few minutes rather than making your own! That is one thing I can not for the life of me manage to master :) I tried last night again and my 13 year old says "well, what are these supposed to be?" I told him "gee, Chris I don't know...a drink!" Then he gives the ultimate review..."well, they aren't hard as a rock...and they don't taste like shit" ahhh the love...

Ummm... oven and I have no idea for the rest. Just remember that I am the one who burnt a cookie enough to set off the smoke alarms at our hotel just by sticking it in the microwave for thirty seconds. Ill be happy if my house isnt on fire. We bought pie and ice cream for dessert. Turkey is my biggest worries right now...lol.

Ahhh the smoke detector!...that's how we know dinner is done :) lol Our house at Hood was terrible for that and it was always the detector way down the hall in one of the bedrooms. I don't REALLY burn dinner to know it's done :) lol

Microwaves are mean and sneaky like that, oven's don't do that sneak up on you burn, if you baste your turkey every 30-60 minutes and cover it with foil...it won't burn.

Be sure to get a meat thermometer and don't pull that bird out of the oven until the internal temp is at a minimum 165 degrees to make sure it is safe to eat. You will be fine. Heck my first Thanksgiving turkey the outside was burnt and the inside was raw. So you can't go wrong if you read all the package direction on everything and have a themometer to make sure your stuff turns out right. Good luck and you will do great.

i slow cook my turkey for at least 6 hours and baste every 20 minutes and my turkey is always very juicy and literally falling apart because of it lol.

I have used the oven bags makes the turkey come out so Juicy!!! i also do stove top bc i have done it for so long (lazy) that i made homemade and found i didnt like it anymore, my MIL starts with stovetop then adds so much to it like the drippings ect it seems like homemade its SO good.

OH!! one year i got the guts out and left the neck in LOL it tasted fine though lol... but yeah take the guts and neck out. hahaha

I don't do Turkey... Even when it's cooked, I get very sick.
They inject holliday turkeys with a lot of crap. Turkeys are not naturally that big. If someone you know is glutten intolerant, you should tell them to stay away from the turkey, because they do inject it with glutten as well.
Just a very unhealthy and dangerous thing to eat, seriously. You should see how many people end up in a hospital the day after Thanksgiving.

Wait you mean i have to touch the guts!!! Ok we are so eating out. I am a germaphob. I cant stand touching meat of any kind at all. It makes me sick. I am not so sure I can do this anymore...lol. I know... big whimp!

lol about the guts! Ok, so there is a paperish bag of things like the heart, liver, etc inside the neck cavity that you must reach in and pull out. There is also the neck section that's usually in the "other end", the big end where you would put stuffing IF you wanted to. It's not recommended anymore to stuff the turkey because the stuffing isn't usually fully cooked and people can get sick. This is all my worst part about doing a turkey but I've learned to grin and bear it and just do it. Or make my husband do it :)

That video was good! Still thinking about having to touch the turkey is grossing me out...lol. I might just have the hubs or the grandpa do it...lol. It seems easy enough. I hope it turns out good!

Lol about touching guts, yeah i hate the idea of all the samonella germs but no one if my famiy or my moms family has ever got sick after Thanksgiving thats silly LOL heck one year my friend served half raw turkey and we didnt know til after we started eating and no one got sick LOl... you can also contact HEB ect and get ready cooked turkeys that are cleaned ect you just pop them in and warm em up.
